Recipe: Pumpkin Granola

Try this easy pumpkin snack to welcome fall! Pumpkin includes many nutrients including Vitamin A, B1 and C. Recipe author and Master of Science in Nutrition Didadic Program in Dietetics, Bridgette Blakey, shares her secret ingredient:

"This granola is so sweet and crunchy without any oil added! The secret ingredient... APPLESAUCE! I used cinnamon, but you could easily substitute with regular apples. This granola is perfect on top of yogurt, smoothie bowls, and would be INSANE sprinkled on top of vanilla ice cream. Or you could just eat it out of the jar... like I’ve been doing!" 


Ingredients

  • 2 cups of rolled oats
  • 2 teaspoons pumpkin spice
  • 2 teaspoons coconut sugar
  • 1/3 cup pecans, chopped
  • 1/3 cup shredded coconut
  • 1/3 cup cinnamon applesauce
  • 1/3 cup honey
  • 1 teaspoon vanilla

Instructions

Preheat oven to 250° and line a rimmed baking sheet with parchment paper.

Mix first 5 ingredients in a large bowl. Mix applesauce, honey, and vanilla in a medium size bowl. Add in the liquid mixture to the granola and stir until throughly combined.

Spread granola onto lined baking sheet and bake for one hour, stirring every 20 minutes. Allow to cool for at least 10 minutes. Enjoy!
